Welcome to the bright side. The sun seems to be shining a little longer these days, which makes it the perfect time to introduce ourselves. We’re Solara – a sustainably sunny sparkling from Duxton Vineyards. We thought it was strange that someone, somewhere decided sparkling was only for ‘big’ events. So, it’s been our mission to free the fizz, making good company and living in the moment the perfect reason to pop open the bubbles.

But there’s also the added bonus that with every bottle, you’re helping regenerate the earth.

Each month, we’ll be in touch to chat all things fizz, including what you can do to add a little extra to your day. From cocktails to the tunes that get us feeling brighter, here’s the to-do list for October.

Darling 75 Cocktail

Ingredients
30mL gin
15mL lemon juice, freshly squeezed
15mL simple syrup
90mL Solara Chardonnay & Pinot Noir
Garnish: lemon twist (optional)

Method
1. Add the gin, lemon juice and simple syrup to a shaker with ice and shake until well-chilled.
2. Strain into a glass.
3. Top with the Solara Chardonnay & Pinot Noir.
4. Garnish with a lemon twist (optional).

MEET AT: The local park or botanic gardens for a lazy picnic in the spring sun.

WANDER TO: We’re daydreaming about toes in the sand at Wategos Beach in Byron Bay.
